Bubble Cocktail Recipe

Ingredients

  • 45ml Gin
  • 30ml Elderflower Liqueur
  • 20ml Fresh Lemon Juice
  • 2g Sodium Alginate
  • 5g Calcium Chloride
  • Tonic Water to top

Instructions

  1. Prepare the spherification bath by dissolving calcium chloride in water. Blend sodium alginate with elderflower liqueur.
  2. Using a pipette, drop the alginate mixture into the calcium bath to form flavour spheres. Rinse gently.
  3. Combine gin and lemon juice in a coupe glass with ice, stir gently.
  4. Top with tonic water and carefully place the elderflower spheres on top.
  5. Serve immediately — guests pop the spheres for a burst of elderflower flavour.
